We’ve been craving comfort here lately.  …& These savory Mashed Potato, Bacon, Spinach & Herbed Goat Cheese Waffles hit the spot!  We used sweet potatoes for this batch.  However, they are equally delicious using white potatoes.  We used our Herbs de Provence Chèvre & topped them with a little Sour Cream & fresh chives,  but when it comes toppings that would work…the sky is the limit!  Get creative!  We typically double the recipe so that we can enjoy them for dinner with a yummy spring mix salad….& then eat the leftovers the next day for brunch!

 

INGREDIENTS

  • 2 cups Mashed Potatoes (White Potatoes or Sweet Potatoes)
  • 1/2 cup MC Herbs de Provence Chevre
  • 1/2 cup Flour
  • 1 Egg
  • 2 tbsp Olive Oil
  • 1/3 cup Whole Milk
  • 1/4 cup cooked Bacon, chopped
  • 1 cup Baby Spinach, chopped
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • Pinch of Black Pepper
  • Sour Cream, Chives, Avocado, or Ketchup or condiment of choice for topping!

INSTRUCTIONS

Preheat your waffle iron to the medium-high setting.  We then spray ours with a nonstick olive oil spray.

In a large bowl mix together the mashed potatoes, olive oil, egg, whole milk, bacon pieces, goat cheese crumbled and spinach until it is combined.

In a separate bowl, mix together the flour, baking soda, baking powder, salt and black pepper

Next add the dry ingredients to the wet ingredients and stir until combined.

Add about 1/2 of the batter to the center of the waffle iron.  Next spread the batter out so that some batter covers at least part of each triangle.  It will be a very thick batter.   Once you have it smoothed out a bit, close the waffle iron and cook until either your waffle iron says that it’s ready or about 4-6 minutes.

We delicately then remove the waffle from the waffle iron and then transfer it to a plate, and then repeat with the rest of the batter.
